It can be prepared boiled, roasted or grilled preserving its nutritional values. The wedge sole is low-calorie, it contains proteins, iron, potassium, and vitamins E and K, and helps control hypertension due to its concentration of Omega 3.. Tiene forma ovalada y alargada, con una espina central fácil de limpiar. Puede consumirse hervida, al horno o a la plancha, conservando todas sus propiedades. It is a lonely fish, very territorial,hiding easily in rocks. It feeds voraciously on fishes, crustaceans, and cephalopods. Although it has plenty of fishbones, its flesh is delicious.

The cuckoo wrasse is fished using trawl nets. It is kept fresh on ice until it is sold at the fish market. It is a multicoloured lengthened fish that reaches 11-15 in –the male being bigger than the female. The cuckoo wrasse is a half-fat fish, therefore it is especially beneficial to reduce cholesterol and triglyceride levels in the blood.

The blackbelly rosefish is a half-fat white fish. Its habitat is the rocky areas where it feeds on seafood and small fishes. These factors give to its flesh an intense and nice marine taste. It has a flashy red colour as well as a large amount of spines in its whole body. It is a natural source of first-quality proteins, also containing plentiful omega 3 fatty acids, vitamins and minerals.. The first part of its life is a female, and it turns into a male when it ages, having a stage in between where it is male and female at once, although it cannot ever self-fertilize.
